Freezing mango pulp the right way, 12-month flavour

Why freeze pulp instead of cubes
Cubed mango loses texture on thaw, the cells rupture and the cube turns to slush. Pulp avoids the problem entirely because the texture is already gone.
For everything except a salad or a salsa, pulp is the right freezer format. Lassi, kulfi, smoothies, jam, curd, chutney, all want pulp.
Ripeness window, pick the peak
Freeze fruit at peak ripeness, not before and not after. A Chaunsa with give under the thumb, fragrance at the stem, and a faint wrinkle around the shoulder is perfect.
Under-ripe pulp tastes flat after thaw. Over-ripe pulp tastes fermented after thaw. The window is roughly 24 hours wide, work fast.
Purée method without water
Peel, slice the cheeks off the stone, scrape the flesh from the skin, and blend on high for 30 seconds. Do not add water, water dilutes flavour and forms ice crystals on freezing.
If the pulp is too thick to pour into bags, add a splash of lemon juice instead. The acidity protects colour and adds zero water content.
Bag, flatten, freeze, the three rules
Portion into 200g silicone reusable bags or BPA-free zip-locks. 200g is one large lassi, one kulfi batch, or three smoothies.
Flatten each bag to a 1cm slab and lay flat in the freezer until solid. Flat slabs stack, defrost in 20 minutes, and freeze evenly.
Label, rotate, use within 12 months
Write variety + date on every bag. Sindhri pulp tastes different to Chaunsa pulp, you'll want to know which is which in February.
Pulp keeps 12 months at -18°C with negligible flavour loss. Beyond 14 months, the aroma compounds start to flatten.

- Do I need to add sugar before freezing?
- No, Pakistani mangoes are sweet enough. Sugar can mask flavour changes you'd want to notice on thaw.
- Can I refreeze defrosted pulp?
- No, refreezing collapses texture and risks bacterial growth. Defrost only what you need.
- Will the pulp brown in the freezer?
- A small splash of lemon juice prevents browning. Without it, you may see slight oxidation at the bag edges, harmless but visible.
