How to tell if a Pakistani mango is ripe, five reliable signs

Skin colour is the least reliable ripeness indicator. Here's what to check instead.

Sign 1, Smell at the stem

A ripe Pakistani mango smells perfumed and floral at the stem end. If you can pick the mango up and smell it without bringing it to your nose, it's ready.

No smell means under-ripe. A faint alcohol or vinegar note means over-ripe, eat that one immediately.

Sign 2, Thumb give at the shoulder

Press gently with your thumb on the broad shoulder near the stem. A ripe mango yields slightly, like a ripe avocado but firmer.

Soft all over means over-ripe. Hard with no give means another day or two on the counter.

Sign 3, The wrinkle test

Look at the skin around the stem. As the fruit ripens, the skin contracts slightly and a fine wrinkle forms at the stem end. This is the most reliable single sign, it appears just before peak.

No wrinkle = not ready. Deep wrinkle = past peak (still good but eat today).

Sign 4, Weight relative to size

A ripe mango feels heavy for its size, the moisture has fully migrated into the flesh. Two mangoes of identical size where one feels noticeably heavier, the heavy one is closer to ripe.

This is a comparative sign, not absolute, but useful when sorting a carton.

Why colour doesn't work

Pakistani mango varieties differ enormously in skin colour at ripeness. Langra stays green when ripe. Chaunsa goes pale yellow with green patches. Sindhri turns deep gold. Anwar Ratol is bright yellow.

Why is my Langra still green?
That's normal, Langra is green-skinned at ripeness. Check stem smell and thumb give instead.
My mango has black spots, is it bad?
Black spots on the skin usually indicate over-ripeness or bruising. Cut the fruit open, if the flesh is firm and aromatic, it's still good.
Should a ripe mango be soft like an avocado?
Firmer than a ripe avocado. A mango should yield to pressure but not feel squishy.
