How to cut a Pakistani mango, three methods, no waste

The mango has one stone and it's not in the middle. Here's how to navigate around it.

Know the stone

Pakistani mangoes have a flat, oval stone running the length of the fruit along the same axis as the stem. The stone is always offset to one side, never centred.

Hold the mango with the stem pointing up. The flatter side of the fruit is parallel to the broader face of the stone. The 'cheeks' are the rounder sides.

The cheek method (UK-friendly)

Stand the mango stem-up. Cut down each side, about 1cm from the centre line, to slice off the two 'cheeks', flesh-side cuts that miss the stone entirely.

You now have two cheeks plus a central slab containing the stone. The slab still has usable flesh, peel and trim around the stone with a small knife.

The hedgehog method (best for serving)

Take each cheek and score the flesh in a cross-hatch pattern, cutting down to but not through the skin. Push the skin inside-out so the cubes pop up like a hedgehog.

Serve as-is or run a spoon along the skin to release the cubes into a bowl. This is the showpiece method for guests.

The Pakistani spoon method

The home-kitchen method across Pakistan: cut the mango in half across the equator, scoop out the stone, then scoop the flesh from each half straight into your mouth with a teaspoon.

Zero knife-work, zero waste, maximum messy enjoyment. The way a mango is meant to be eaten.

Don't waste the stone

There's flesh clinging to the mango stone that's hard to remove cleanly with a knife. Suck on it. It's a Pakistani household ritual.

If you really want to be productive: simmer the stones in a sugar syrup for 20 minutes to make mango stone tea, high in mangiferin and surprisingly good iced.

Do I need to peel a Pakistani mango?
Yes, the skin is bitter and contains urushiol, which causes contact dermatitis in some people.
What's the easiest method for kids?
The hedgehog method. Score, flip, eat the cubes with a spoon. No knife near small fingers.
Can I eat mango skin?
Technically yes but it's bitter and a small percentage of people get a mouth rash from it. Don't bother.
