How to ripen Pakistani mangoes at home, the 4-7 day plan
Pakistani mangoes ship deliberately under-ripe to survive the flight. Here's how to finish them perfectly.

Why your mango arrives firm
Pakistani mangoes are harvested at the mature-green stage, full size, full sugar potential, but not yet softened. They are then airfreighted and UK courier-delivered in a state where they can survive handling without bruising.
The fruit completes its ripening on your counter. This is by design, a mango ripened on the tree never makes it to the UK without damage.
The default counter method
Set the mangoes stem-up in a single layer on a kitchen surface at normal room temperature (18-22°C). Do not refrigerate, do not stack, do not cover.
Check daily. A ripe Pakistani mango yields gently to thumb pressure at the stem end, smells perfumed even from across the room, and the skin around the stem develops a slight wrinkle.
Speeding it up, the paper bag
If you need them ripe in 3-4 days instead of 6-7, put them in a brown paper bag with a single banana or ripe apple. The ethylene released by the other fruit accelerates softening.
Open the bag once a day to release moisture, otherwise mould sets in. This method works best at 20-24°C.
Slowing it down
If your fruit is ripening faster than you can eat it, move ripe mangoes to the fridge. They'll hold at peak for 4-5 days at 4°C without losing aroma.
Never refrigerate an unripe mango, chilling injury below 13°C arrests ripening permanently and the fruit becomes mealy.
Variety-specific ripening windows
Sindhri ripens fastest (3-4 days from arrival), Chaunsa next (4-5 days), Anwar Ratol and Dosehri a touch slower (5-6 days), Honey Chaunsa is the slowest (6-7 days).
Mixed cartons: separate by variety on arrival so the faster-ripeners don't push the slower ones into over-ripeness.

- No, microwaving softens the flesh without developing the aroma. You get a warm, bland mango.

- Check the room temperature. Below 18°C, ripening stalls. Move to a warmer spot.
