Where should I store the carton when it arrives?
On the kitchen counter, out of direct sunlight, with the lid open or removed so air circulates. Don't stack other items on top, ripe mangoes bruise easily.
Can I put mangoes in the fridge?
Only once they are fully ripe. Refrigeration of a ripe mango extends edible life by 4 to 5 days. Refrigerating an unripe mango halts flavour development and is the most common reason a Pakistani mango disappoints at home.
Can I freeze mango pulp?
Yes. Purée the flesh of ripe fruit with a squeeze of lime, decant into airtight tubs and freeze. Pakistani mango pulp keeps for up to a year and is excellent for lassi, kulfi and ice cream.
How long will a carton last?
Cartons arrive at, or near, eating ripeness. Expect 3 to 5 days at room temperature once ripe, or 7 to 10 days if you stagger ripeness by moving ripe fruit to the fridge while less ripe fruit finishes on the counter.
