Carbide vs ethylene ripening, what to avoid
Calcium carbide is banned in Pakistan for a reason. The chemistry, and the visible signs, explained simply.

The two ripening chemistries
Ethylene is the natural ripening hormone produced by every fruit. Commercial ripening rooms inject controlled ethylene gas to ripen evenly, this is safe and standard worldwide.
Calcium carbide produces acetylene gas on contact with moisture. Acetylene mimics ethylene's effect but is harmful, and crude calcium carbide often contains arsenic and phosphorus impurities.
Why carbide is still used illegally
Carbide is cheap, requires no specialist equipment, and ripens fruit in under 24 hours. It's banned in Pakistan (Pure Food Ordinance 1960) and India but persists in informal markets.
Carbide-ripened mango ripens skin-first while the inner flesh stays under-developed, the visual effect is convincing but the eating experience is not.
How to spot carbide-ripened fruit
Uniform yellow skin with little green and no flush of orange-red, too perfect, too even. Real fruit ripens unevenly.
Slightly chemical or acetylene smell at the stem. Flesh that's still hard or starchy inside despite a fully yellow exterior. Short shelf life, carbide fruit rots within 2 days of ripening.
Health risks from carbide residue
Acetylene affects the central nervous system at high exposure. Industrial-grade carbide impurities (arsenic, phosphorus) are cumulative toxins.
WHO and FAO both classify carbide-ripening as a public health concern. The visible carbide residue (a grey powder near the stem) is the giveaway.
