How to preserve Pakistani mango without losing the flavour to long cooking.

Why most mango jam tastes flat
Commercial mango jam is cooked long and hot to a standard 105°C setting point. That's fine for high-pectin fruit like plums, but mango is low in pectin and high in volatile aromatic compounds, the floral honey notes literally boil off above 100°C.
Small-batch, short-cook jam (the French confiture method) preserves those aromatics. The trade-off is shelf life: 3 months refrigerated instead of 1 year on the shelf. Worth it.
Ingredients for a 4-jar batch
1kg ripe Chaunsa pulp (about 5 large mangoes, peeled and pitted), 600g jam sugar (sugar with added pectin, Tate & Lyle and Silver Spoon both sell it), juice of 2 limes, 1 vanilla pod split and scraped, 4 cardamom pods crushed.
Jam sugar is non-negotiable for short-cook mango jam. Plain caster sugar won't set; you'd need to cook for 40 minutes and lose the aromatics.
The 12-minute cook
Macerate the pulp, sugar and lime juice for 2 hours at room temperature, this draws moisture out of the fruit cells and shortens the cook. Add the vanilla and cardamom. Bring to a fast rolling boil in a wide heavy pan.
Boil for 8 to 12 minutes, stirring constantly with a wooden spoon. Test set by chilling a teaspoon of jam on a frozen plate for 30 seconds, if it wrinkles when pushed with a finger, it's done. Don't overshoot.
Jarring and storage
Sterilise four 250ml jars in a 130°C oven for 15 minutes. Fill while jam is still hot, leaving 1cm headspace. Seal immediately. Refrigerate once cool.
Keep refrigerated; the lower sugar content and shorter cook mean this isn't a long-shelf jam. Use within 12 weeks. For longer storage, freeze in 100g portions, defrosts beautifully.

- Can I use frozen Chaunsa pulp?
- Yes, defrost fully and drain off any free water before macerating. Water in the pan extends cook time and dulls flavour.
- Is this safe to give as a gift?
- Yes if refrigerated. Label clearly with 'refrigerate after receipt' and a use-by date. Don't ship in summer without an ice pack.
- Can I reduce the sugar?
- Not without changing the recipe, pectin needs the sugar to set, and lower sugar shortens shelf life further. For reduced-sugar jam, use a low-sugar pectin (Pomona's Pectin) and follow its instructions.
