Pakistani mango chutney, sharp, hot, and built for unripe Langra

Unripe Langra is the only right answer

Pakistani chutney is built around aam, unripe, green-fleshed mango. Langra is the variety of choice because its flesh stays firm and citrus-acidic when raw, taking on spice without going to mush.

If you can't source unripe Langra, use the firmest green mango your grocer has. Never use a ripe mango, it'll cook to jam in minutes.

The mustard-kalonji tempering

Heat 3 tablespoons of mustard oil until it smokes, then cool slightly. Add 1 teaspoon mustard seeds, 1 teaspoon kalonji (nigella), 4 dried red chillies and 6 curry leaves. Once they crackle, your base is ready.

Mustard oil is non-negotiable. Vegetable oil produces a flat chutney. If you can't find mustard oil, sunflower oil with a teaspoon of brown mustard powder stirred in is an acceptable substitute.

Cooking the mango

Add 500g peeled, julienned unripe Langra to the tempered oil. Stir on medium heat for 4-5 minutes until just softened but still holding shape.

Add 100g jaggery (gur), 1 teaspoon turmeric, 1 tablespoon Kashmiri chilli powder and 1.5 teaspoons salt. Cook another 8 minutes until the jaggery dissolves and the chutney is glossy.

Bottling and ageing

Pack hot into sterilised jars and seal. The chutney is edible immediately but the flavour deepens dramatically over the first week as the mustard oil mellows.

Stored in the fridge it keeps for 3 months. On the counter, sealed, it keeps for 4 weeks before the colour starts to dull.

What to eat it with

Pakistani households serve this with paratha for breakfast, alongside daal-chawal at lunch, and with grilled fish at dinner. It also transforms a cheese board, try it with a sharp Cheddar or aged Manchego.

Mixed into Greek yoghurt it becomes a quick raita; spread on a sandwich it does what Branston pickle does, only better.

No, ripe mango cooks to jam in minutes and you lose the citrus sharpness that defines this chutney.
Is mustard oil safe to cook with?
Yes, when heated to smoking point first to neutralise erucic acid. This is the traditional method.

Dark muscovado sugar. White sugar produces a thinner, less complex chutney.
