Mango kulfi with Chaunsa, no ice cream maker, no cornflour shortcuts

Real kulfi is reduced milk and fruit. No eggs, no cream, no cornflour. Here's how to do it properly.

What separates kulfi from ice cream

Kulfi is not ice cream. Ice cream is churned to whip air into a custard base; kulfi is unchurned, made from milk reduced until it concentrates into a fudge-like consistency, then frozen slowly. The result is denser, chewier, and tastes like the milk itself, not the cream.

Adding cornflour to thicken (a 1990s restaurant shortcut) skips the reduction entirely and gives a starchy mouthfeel. Don't do it.

The milk reduction

Start with 1.5 litres of full-fat milk in a heavy-bottomed pan. Reduce on low heat, stirring every 2-3 minutes for 45-60 minutes, until the volume is roughly 500ml and the milk has turned a pale beige. This is your kulfi base.

The brown bits that stick to the pan sides? Scrape them back in. That's where the malted sweetness comes from. A patient reduction is 80% of the recipe.

Folding in Chaunsa

Cool the reduced milk to room temperature. Fold in 250g of Chaunsa pulp (no sugar added, Chaunsa carries it), 30g chopped pistachios, and 4 crushed cardamom pods.

Don't blend. Folding leaves visible streaks of mango pulp through the kulfi, which marble beautifully when sliced.

Freezing for the right texture

Traditional kulfi moulds are conical aluminium, they freeze fastest from the outside in. If you don't have them, use small plastic dariole moulds or 100ml silicone cups.

Freeze for at least 8 hours, ideally 12. The slow freeze creates large, clean ice crystals that give kulfi its signature chew. A blast freezer ruins the texture.

Unmoulding and serving

Dip the mould briefly in warm water and slide the kulfi onto a plate. Slice into thick rounds, dust with crushed pistachio, and serve immediately, kulfi melts faster than ice cream because of its lower air content.

Pair with falooda noodles and rose syrup for a Karachi-style summer dessert, or eat plain with a wedge of fresh Chaunsa alongside.

Frequently asked

Can I use evaporated milk to skip the reduction?
You can but the flavour is flat. Evaporated milk is reduced under vacuum without the Maillard browning that defines kulfi.
How long does kulfi keep?
Up to 2 weeks in the freezer, well wrapped. After that it starts absorbing freezer odours.
Can I make this dairy-free?
Reduce full-fat coconut milk the same way. The result is excellent but distinctly tropical, not classic kulfi.
