No-churn mango ice cream

No ice cream machine, no eggs, no fuss. Freezer overnight, done.

How no-churn works

Traditional ice cream needs a custard base and a churn, the constant agitation as it freezes prevents large ice crystals from forming and gives the smooth texture. No-churn replaces the churn with two tricks: whipped cream provides the air, and condensed milk provides the anti-freeze (the high sugar content lowers the freezing point so crystals stay small).

The result is denser than churned ice cream but smoother than a granita. It's the right texture for a fruit-forward flavour like Chaunsa, which can get lost in airy churned bases.

The four ingredients

300g ripe Chaunsa pulp, 300ml double cream (33%+ fat, single cream won't whip), 1 × 397g tin sweetened condensed milk, ½ tsp ground cardamom (optional but recommended).

That's it. No eggs, no stabiliser, no extra sugar. The condensed milk and the natural fructose in Chaunsa carry the entire sweetness load.

The method

Whip the cold double cream to soft peaks, stop the moment the whisk leaves a trail. Over-whipped cream gives butter chunks in the final ice cream.

In a separate bowl, fold the condensed milk, mango pulp and cardamom together. Tip in the whipped cream and fold (don't stir) until just combined, three or four passes of the spatula. Pour into a loaf tin lined with cling film. Cover. Freeze for 8 hours minimum.

Serving and variations

Soften at room temperature for 5 minutes before scooping, straight-from-freezer no-churn is brick-hard. A warm scoop helps. Serve in chilled bowls with crushed pistachios or a dribble of fresh mango pulp.

Variations: ripple in 60g of mango pulp halfway through freezing for a swirl. Add 50g chopped pistachios for kulfi-style texture. Replace cardamom with saffron for a Mughal-court version.

Can I use frozen Chaunsa pulp?
Yes, defrost first in the fridge, then drain off excess water before measuring. Watery pulp gives icy ice cream.
How long does it keep?
2 weeks in a sealed container. After that it starts absorbing freezer flavours; press cling film directly onto the surface to extend.
Can I make it dairy-free?
Substitute coconut cream (whipped) and coconut condensed milk. The result is excellent but distinctly tropical, less of a pure mango profile.
