Why fresh Chaunsa pulp beats every bar mix
Commercial mango purée (Boiron, Funkin, Monin) is built around Mexican Ataulfo, clean but flat. Chaunsa pulp brings honey, cardamom and stone-fruit aromatics that no commercial purée replicates.
Blend pulp the day you use it; freeze in 100g portions if you can't. Don't substitute mango juice from a carton, it's diluted, oxidised, and will make your cocktails taste of supermarket squash.
Karachi mango mojito
Per serve: muddle 8 mint leaves with 15ml lime juice and 1 tsp brown sugar in a tall glass. Add 60g Chaunsa pulp and 50ml white rum. Top with crushed ice and 80ml soda water. Stir gently with a long spoon and serve.
The brown sugar (instead of caster) is the Karachi touch, it brings molasses notes that meet the Chaunsa honey halfway. Skip the rum and double the soda for the under-18 version.
Lahore mango margarita
Per serve: salt the rim of a coupe glass with kala namak (black salt). In a shaker, combine 50ml silver tequila, 25ml triple sec, 25ml lime juice, 80g Chaunsa pulp and ¼ tsp Kashmiri chilli powder. Shake hard with ice for 10 seconds. Strain into the glass.
Kala namak is what makes this Pakistani rather than Mexican, its sulphurous, savoury note locks onto the mango and the chilli without being weird. UK Asian grocers stock it cheaply.
No-alcohol mango spritz
Per serve: 80g Chaunsa pulp, 15ml lime juice, 1 tsp honey, 20ml ginger syrup, top with 120ml chilled tonic water in a wine glass over ice. Garnish with a basil sprig and a mango cheek.
This is the drink to serve to drivers, pregnant guests and observant Muslim friends, it's not a 'mocktail' apology, it's a proper drink with bitterness from the tonic, heat from the ginger and fruit from the Chaunsa.

- Yes, multiply the mojito and spritz by your guest count, mix everything except the soda/tonic, refrigerate up to 4 hours, then top with the bubbly element when pouring.
- What rum should I use for the mojito?
- A clean white rum (Bacardi, Havana Club 3), aged rums fight the Chaunsa. For the margarita, a 100% blue agave silver tequila is essential; mixto destroys it.
- Are these recipes UK-licence-friendly?
- Yes, all ABV ratios are within UK home-bar norms (~12% ABV per serve). Serve responsibly and never pre-batch the tequila version with the lime more than 30 minutes ahead, citrus oxidises and bitters.
