Dosehri Mango French Toast
Brioche soaked in cardamom custard, topped with warm Dosehri compote, a weekend brunch dish.

Ingredients
- 4 thick slices brioche or challah
- 2 eggs
- 120 ml whole milk
- 1 tbsp caster sugar
- 1/4 tsp ground cardamom
- 2 ripe Dosehri mangoes, diced
- 1 tbsp honey
- Knob of butter for frying
Method
- Whisk eggs, milk, sugar and cardamom in a wide dish.
- Soak each brioche slice 30 seconds per side, then fry in butter 2 minutes per side until golden.
- Warm the diced Dosehri with honey in a small pan for 2 minutes, just to release the juice.
- Stack the French toast, spoon the warm Dosehri compote on top and eat at once.
