Dosehri Mango French Toast

Brioche soaked in cardamom custard, topped with warm Dosehri compote, a weekend brunch dish.

Ingredients

  • 4 thick slices brioche or challah
  • 2 eggs
  • 120 ml whole milk
  • 1 tbsp caster sugar
  • 1/4 tsp ground cardamom
  • 2 ripe Dosehri mangoes, diced
  • 1 tbsp honey
  • Knob of butter for frying

Method

  1. Whisk eggs, milk, sugar and cardamom in a wide dish.
  2. Soak each brioche slice 30 seconds per side, then fry in butter 2 minutes per side until golden.
  3. Warm the diced Dosehri with honey in a small pan for 2 minutes, just to release the juice.
  4. Stack the French toast, spoon the warm Dosehri compote on top and eat at once.
