How to bring a carton to perfect eating ripeness at home.

Will the mangoes be ripe on arrival?
Cartons usually arrive at eating ripeness or one day away from it. The skin develops freckles, the aroma intensifies and the fruit gives gently to a thumb press at the stem end when it is ready.
How do I ripen mangoes at home?
Leave the carton at room temperature, out of direct sunlight, with the lid open. Most varieties finish ripening on the counter within 24 to 48 hours. Never refrigerate an underripe mango, cold flesh stops developing flavour.
How can I speed up ripening?
Place the mangoes in a paper bag with a banana or apple, the ethylene gas these fruits release speeds ripening. Check daily so you don't go past peak.
How do I tell when a mango is ripe?
Press gently at the stem end, a ripe mango yields slightly without feeling mushy. The skin will smell strongly fragrant and may develop freckles. Skin colour alone is misleading: ripe Langra and Chaunsa often stay greenish-yellow.
